Their culture is not yet fully explored but what we know is, that they were genius slingshooters when fighting as so-called “Fons Balears” in the Punic wars against the Romans. Later the Romans took advantage of their exceptional fighting technique in various wars and began to settle in Majorca. They brought their highly developed culture to the island and as a main asset they transmitted the know how of growing grapes and producing wine and the wonderful culture of enjoying it. We might call this an early successful migration project which still gives us joy and satisfaction.
Vinification
Gentle treatment of the vines with natural products. Careful cultivation of the soil, promoting biodiversity, to ensure the resistance and health of the vines.
Harvested grapes are kept in cold chambers for up to 12 hours to preserve aromas and avoid oxidation during destemming. Manual selection of the grapes, handpicking of the berries.
No use of sulphites before fermentation. Instead, use of non-saccharomyces yeasts for fruit accentuation, increase in typicity and complexity similar to that of wild fermentation, with the added benefit of lowering the sulphur content in the wine.
Fermentation in inox tanks. Extended maceration completed 7 days after the end of fermentation. Malolactic fermentation in inox tanks.
Ageing
12 months: 50% 3000 L wooden barrel and 50% inox tank.
Colour
Ruby red with violet reflections at the edge of the glass.
Nose
Aromas of prunes, sweet vanilla and fennel seeds, fruit compote and a hint of cocoa powder.
Palate
Fresh and lively on the palate, with notes of fresh plums, cocoa and spices, a minerality reminiscent of limestone and an elegant tannic structure. With its volume and persistence, it is ideal for everyday drinking.
TALVIN is an excellent companion to light dishes such as salads, seafood, cheese, ham and variations of vegetarian dishes and tapas.
